Sweet and Sour Pineapple Curry Recipe Thai

The things needed to make this sweet and sour pineapple curry are,

1 fresh pineapple (1kg) peeled and cut in bite sized chunks
80g sugar
1 cup coconut milk
2 red chilies and 2 green chilies
3 cardamom pods slit and bruised
2 table spoon oil
5 shallots sliced
2 cloves garlic minced
1 stick cinnamon
4 cloves
1 star anise pod
1 tea spoon salt

SPICE PASTE

1 table spoon coriander seeds
1/2 tea spoon fennel seeds
1/2 tea spoon cumin seeds
5 shallots peeled
2 cloves garlic peeled
1 red chili
1/2 tea spoon turmeric powder and
1/2 tea spoon salt

Let’s see how to make this sweet and sour pineapple curry in just 30 minutes. First of all we have to prepare the spice paste by dry frying the coriander seeds cumin seeds and fennel seeds in a pan over medium heat until fragrant. Transfer it to a grinder and grind it well to a fine powder and set aside.
Get the shallots, garlic, chili and salt in a grinder and grind well until a smooth paste then add the turmeric powder to the paste. Then heat the oil in a sauce pan and when the oil is heated add the shallots and garlic and stir fry over medium heat until golden brown for about 2-3 minutes.
Then add the spice paste, cloves, star anise cardamom and cinnamon. Stir fry until fragrant then add the pineapple chunks sugar and red chili And cook over medium heat for about 5_10 minutes.
If the pineapple is too sour add little more sugar then add the coconut milk and bring it to a boil. Reduce the heat to low and simmer by keeping the pan open for about 5 minutes finally add the green chilies and cook until soft. Then the Thai style sweet and sour pineapple curry is ready.
