Aw man I should have thrown my butternut in today’s roast
Mmmmmm. Looks good.
Mine was soccer to pot cooking but could have been slow cooked. First I looked for frozen stuff to cook and had bone in goat cubes, butternut, onion, and mushrooms. Started that cooking (oven roast them fried the goat, sauteed the veggies). Then I looked for butternut goat stew and found a recipe using cumin, cardamon, garlic, saffron, water, cinnamon, and paprika (but not mushroom. Finally, I went through it all to remove most bones for my wife and she made white rice to serve it over. She doesn’t like squash or goat but found it tasty… And I’m sure you could get cubed goat meat and a goat bone instead for a slow cooker.
Butternut is often an overlooked starchy vegetable as people go for potatoes instead, but I like the sweet flavor. Savory pumpkin is another good overlooked vegetable.
